Opossum's Opotatoes

Mima likes these potatoes, and they’re easy to make.

Ingredients

  • 5-7 White potatoes
  • 1-2 tbsp Paprika
  • 6 whole garlic cloves
  • 2 tsp crushed garlic (שום כתוש)
  • Salt to taste (about 1 tbsp)
  • Canola oil or any other neutral oil

As in all opossum’s recipes, the quantities are entirely approximate. You will learn how to make good food by experimenting and gaining experience. Don’t worry if they don’t come out as well as you want the first few times you make them.

Directions

  1. Preheat the oven to 200 degrees (400 F)
  2. Cut the potatoes into large chunks (about 1 to 1 1/4 inch cubes)
  3. Cut the garlic cloves into medium-sized pieces (about 4 or 5 pieces per clove)
  4. Place potatoes and garlic in a mixing bowl and add paprika, crushed garlic and salt
  5. Mix and add enough oil to allow the spices to spread and cover all the potatoes
  6. If the potatoes and not looking like a deep red, add more paprika and mix
  7. Add a bit more oil because it makes things delicious
  8. Put the mixture in a pan lined with baking paper. The potatoes can touch, but should all be in one layer
  9. Add 1/4 cup water to the pan, cover and bake for 30-40 minutes until potatoes are soft
  10. Remove the potatoes from the oven, uncover, and use the bottom of a glass to smash the potatoes into smaller, rougher pieces
  11. Add more oil, salt, and paprika as necessary to get the flavor and color right
  12. Return and bake uncovered for 15-20 minutes until the edges are crispy
  13. Remove, stir/flip, and return for another 5-15 minutes until all exposed parts of the potatoes are crispy
  14. Feed your mima and make your opossum oproud
